These are the countries we will include on our Eurail Pass Global, which will allow us 15 days of travel in 2 months time (though in our experience, this always adds up to more due to lazy checkers).

Good pancakes (palacsinta)! Beautiful beaches! And Dubrovnik is supposed to be very charming.
[edit] Money Saved with Passes
Passes cost about $750, and each trip involved about $75 in reservations (per person), so total cost with passes: $1200 roughly. Without the passes, each trip would've cost about $400 including the night trains (at least), for a total of: $2400 roughly. So, it's safe to say we saved bout $1,200 by using a Eurail pass!

We'll probably travel by bus and car within Jordan.

Take a train to Southern Thailand in order to get to some little island paradise. Take a train to Aranyaprathe from Bangkok for 48 baht ... US$1 :). Cross the Cambodian border by either Tuk-tuk, motorcycle, or bus.

From Battambang, train to the Cambodian capital Phnom Penh for 25,300 riel ... US$5 :). From here bus to Saigon. Note: the Battambang train takes exceedingly long and only runs once a week. It will be more feasible to take a bus from Battambang to Phnom Penh.

We will need to be very cognizant of our time schedule for travel overland.

Only Shinkansen, please. The JR500 Nozomi trains run on this line!

Perhaps, perhaps...; time is limited, but it's supposed to be beautiful up there.
